Zwilling MIYABI KOH 4000FC Gyutoh – kitchen knife for slicing meat
This knife combines Japanese craftsmanship with a clear, elegant design. The blade is made of FC61 steel, hardened through a special ice treatment and sharpened by hand using the Honbazuke method. The handle is crafted from dark pakkawood and shaped into an octagon, giving you a secure grip and a distinctive look.
Striking details with traditional inspiration
The octagonal handle includes a mosaic pin inspired by samurai amulets. The blade carries the MIYABI logo and is sharpened to an angle between 9.5° and 12°, making it suitable for precise cuts. Manufactured in Seki, Japan, this knife reflects traditional values in every detail.

Tips for the care and storage of knives
- It is best to clean the knife immediately after use with a damp cloth; especially after handling acidic foods, do not leave the knife uncleaned.
- Do not use corrosive or abrasive cleaning agents.
- Do not leave knives with wooden handles in water / do not clean them in the dishwasher.
- Stone or ceramic cutting boards damage the knife blades and make them dull.
- Do not store knives loose in drawers; knife blocks, magnetic strips, drawer inserts, magnetic boards or blade attachments are more suitable. Knife cases, knife bags or blade protectors can be used for safe transport.
